Diwali is around the corner and there is a huge list of tasks to be accomplished. One of the major Diwali chore is preparing yummy food that the family can enjoy together and also serve guests.
Besan Laddus are a Diwali faraal (snacks) staple and I gave them a twist by enriching with powdered Badam (almond). I made these yummy laddus last year on Diwali at almost 11th hour. Although, this is a festival that we don’t celebrate but I always ensure to partake in all festivals by preparing traditional foods related to it even if we don’t follow the rituals.
You should try this quick sweet. Involve kids if possible, they will have fun shaping the laddus and have a sense of achievement and pride while biting into them.
BADAM AUR BESAN KE LADDU RECIPE
( makes 12 to 15 1inch diameter ladoos)
2 cups fine besan ( gram flour)
1/2 cup badam ( almonds), powdered
1 cup powdered sugar
3/4 cup cow ghee, melted
Nut slivers for garnish
♦In a wide kadhai roast besan till its aromatic and begins to form small lumps. This is the longest step and can last 15 to 20 minutes.
♦ Add in the badam powder and continue to roast for another 5 minutes.
♦ Take the kadhai off flame and let mixture cool halfway or till the temperature you can handle while rolling ladoos.
♦ Now, mix in the sugar well.
♦ Pour in the melted ghee and using your handle get the mixture together.
♦ Start shaping into ladoos. Add a spoon or two of melted ghee in case you find it difficult to shape the ladoos.
♦ Garnish each ladoo with nuts.
♦ Cool well ( avoid refrigerating) before serving.
LADOO SHAPING TIP – The ladoos get a shiny and smooth finish if you roll them in your hands for 10 seconds more after shaping them.
