Playdate Menu

Hi there! This is a continued post of Play date Menu, which is divided into 3 posts. If you haven’t read Post 1, read it here it has the recipes of Melon & Pineapple Drink and Penne & Chunky Cheese. Mince n cheese quesadilla

Mince n Cheese Quesadillas` Recipe 

Quesadilla, the Mexican sandwich, is commonly made using corn tortillas. However, this recipe uses tortillas made using whole wheat flour. Whole wheat flour tortillas are very similar to our Indian chapattis so if you have chapatti dough ready then half your work is done. Quesadillas are commonly served with a salsa or guacamole; I omitted both and instead served with the regular green coriander chutney and ketchup. Its kids after all, who don’t understand salsa and cannot appreciate guacamole.

Ingredients for tortillas
1 cup whole wheat flour
2 tablespoons oil
1 teaspoon salt
Water for kneading dough

Ingredients for quesadilla stuffing
1 1/2 cup chicken mince
5 cloves of garlic
½ an inch piece of ginger
2 green chillies
1 slices of brown bread
Salt as per taste
150 grams block of processed or mozzarella cheese
To make the tortillas:
Step 1 – Combine the flour, oil and salt in a dry vessel. Add water and start to form dough.
Step 2 – Knead and add water as required to make soft pliable dough.
Step 3 – Cover the dough with a damp cloth and keep aside to rest for 15 to 20 minutes or till you prepare the stuffing.
Step 4 – When ready to roll, take enough dough to make a 6 inch tortilla.
Step 5 – Cook the tortilla on a griddle and keep aside. Refer picture for thickness, rolling and cooking of tortillas.

TortillasStep 6 – You should be able to make 6 to 8 tortillas. Remember to make even number of tortillas as 2 of them make 1 quesadilla.
Step 7 – Store the tortillas in a covered container to keep them soft.

To make the stuffing:
Step 1 – Grind chicken mince, ginger, garlic, chilli, bread and salt together to make fine mince. What we usually get in the name of chicken mince is manually chopped mince which is not fine enough so I grind it to get the right texture.
Step 2 – Bake the mince on a baking tray at 200C for 10 minutes. Refer the picture to see how the mince looks after cooking.

To assemble the quesadillas:
Step 1 – Place a tortilla on a dry plate, spread cooked chicken mince and then top it with a layer of grated cheese. Place another tortilla and press lightly on the stuffing. Refer to picture for assembling of quesadillas.
Step 2 – Before serving, lightly heat the tortillas on a skillet, on both sides, with a few drops of oil.
